Chicken Pot Pie

There's nothing quite like the comfort of a homemade, chicken pot pie, especially when it comes from your grandmother's cherished recipe collection.


This classic dish combines tender chicken, wholesome vegetables, and a flaky crust that warms both the stomach and the heart. Follow along to recreate this beloved recipe in your own kitchen!

Ingredients:


- 1/3 cup butter

- 1/3 cup all-purpose flour

- 1/3 cup chopped onions

- 1 teaspoon salt

- 1/2 teaspoon black pepper

- 1 3/4 cups chicken broth

- 2/3 cup milk

- 2 1/2 cups cooked chicken, diced or shredded

- 1 box frozen peas and carrots (about 10 oz)

- 1 box pie crusts (2 crusts)


Recipe:


1. Prepare the Filling:

- In a large skillet, melt the butter over medium heat.

- Stir in the flour, chopped onions, salt, and pepper. Cook, stirring constantly, until the mixture becomes bubbly and slightly golden brown. This creates a roux that will thicken the sauce.

- Remove the skillet from the heat and gradually stir in the chicken broth and milk. Return the skillet to the heat and bring to a boil, stirring constantly until the mixture thickens.


2. Combine with Chicken and Vegetables:

- Stir in the cooked chicken and frozen peas and carrots. Mix well until everything is evenly coated in the creamy sauce. Remove from heat and set aside.


3. Prepare the Pie:

- Preheat your oven to 375°F (190°C). Lightly grease a 9-inch pie dish with cooking spray.

- Roll out one pie crust and place it into the bottom of the prepared pie dish.


4. Assemble and Bake:

- Pour the chicken and vegetable mixture into the crust-lined pie dish.

- Roll out the second pie crust and place it over the filling. Trim any excess crust and pinch the edges together to seal. Cut a few small slits in the top crust to allow steam to escape during baking.

- Optionally, you can brush the top crust with a little milk or beaten egg for a golden finish.

- Place the pie dish on a baking sheet (to catch any drips) and bake in the preheated oven for about 35 minutes, or until the crust is golden brown and the filling is bubbly.


5. Serve and Enjoy:

- Allow the chicken pot pie to cool for a few minutes before slicing and serving. It pairs wonderfully with a fresh green salad or simply enjoyed on its own for a satisfying meal.
